I wouldn't though, their tolerances are much tighter than the tolerance of even xtr or dura ace races and at bicycle speeds we cannot take advantage of their thermal properties. Ceramic bearings will often be grade 10 or higher, but shimano doesn't polish their races past grade 25, equivalent to the grade of loose bearings they use. Use quality stainless steel grade 25 bearings for really nice hubs and grade 40 for everything else decent.
